Pea Salad
2 boxes frozen peas *MUST be boxes - bags don't work well*
1 jar Real Bacon Bits (use only half of jar)
1 tomato - chopped
4 eggs - boiled, peeled & chopped
1 cup shredded cheddar cheese
16 oz. jar Hellmanns Mayonnaise *MUST be Hellmanns - doesn't taste right otherwise*
Place peas in colander and rinse with warm water until no longer frozen. Let continue to drain for a couple of minutes. Place into bowl you plan on serving in. Then all you have to do is add everything else. Use enough mayo until you think its creamy enough.

Japanese Cookies
I'm sure this name is politically incorrect now, but this is what they were called then. :)
1/2 cup chocolate chips
1/2 cup butterscotch chips
1 cup Chinese (LaChoy) Noodles - you know, the crunchy ones
Melt chocolate and butterscotch chips over low heat. Remove from heat. Add dry noodles and mix well. Drop by teaspoonfuls onto waxed paper covered cookie sheet. Refrigerate to speed cooling.

I'm into this cooking thing ATM and I went looking for a Beet Salad recipe (nummy) and a recipe for Sweet Potatoes for the holidays. I'm gonna be a cooking fiend! As long as its quick and simple. lol.
